Chicken Fried Rice

Who has time to cook these days? We are always busy with studying, partying or just scrolling through TikTok. But what do we eat when we are at home. Some people are lucky and their colleges offer meal plans for its students. Some are rich enough to order post mates each night. But for the majority of us, we need to cook, and preferably as cheap as possible and to fast as possible.

This fried rice recipe is the perfect meal for any student. It is cheap, fast and delicious. It can also be prepared with just 1 pan, thus you minimize doing dishes at the end. And the best part is that you do not need any cooking skill for it. Here is how to make it.

Ingredients

  • 3 cups of cooked rice or instant rice
  • 2 eggs
  • 2 cloves of garlic
  • 1 cup of frozen peas and carrots
  • 3 tbsp of soy sauce (more/less to taste)
  • 1 Chicken breast
  • [OPTIONAL] A green onion for garnishing

Preparation

  1. First prepare your rice. It works best if it is day old rice, but if you don’t have that don’t worry about it. You could also use 1 minute microwave rice if you want (even easier).
  2. Chop up the chicken breast and cook it in a skillet with some salt and pepper (make sure it is cooked through like your mom taught you).
  3. When the chicken is cooked, add the rice to the skillet. Toss it around for about 2 minutes to get a light sear on the chicken.
  4. Next push everything to the sides of the pan and make a little hole in the middle. Break to eggs in the hole and scramble them a little. Let them bubble for a few second and then start chopping up the eggs with your spatula. When all chopped up, fold the egg with the rice and the chicken. Make sure you don’t see any large pieces of egg anymore.
  5. Fold in the frozen peas and carrots and add the soy sauce to taste.
  6. Make a hole in the middle again and add the two gloves of garlic (chopped or squished).
  7. Continue stirring until the carrots and peas aren’t frozen anymore.
  8. Remove the pan from the heat and you are done! If you want you can garnish it with some chopped green onion on top when serving.
