Chicken Siam: easy, quick, and cheap

One of my favorite simple weekday dishes is Chicken Siam. This 20-minute oriental-inspired recipe is easy and quick to make which makes it perfect after a long day of classes. And the best thing is: that it only has about 5 key ingredients (most of them are pantry friendly so you don’t need fresh produce from the store).

Ingredients

This is what you need:

  • Chicken (preferably chicken tighs)
  • Rice
  • Oyster Sauce
  • Onions
  • 1 clove of garlic
  • Spring onion (optional)
  • Red chili flakes (optional, but amazing)

Preparation

  1. First start by cooking rice (want perfectly cooked rice? Take a look here!).
  2. First, chop the onion in half (length-wise) and make half union rings approximately 0.5 cm thick. Next, mince the garlic.
  3. Next, chop up the chicken thighs in bite-sized strips (always keep in mind you want to eat it by cutting the chicken pieces, so don’t make them too big). Do not forget to thoroughly wash your hands and the utensils that touched the chicken, you don’t want to get sick!
  4. Season the chicken with any spice you like. I recommend (besides salt and paper) adding a bit of garlic powder, chili powder, and some (smoked) paprika powder.
  5. Add a bit of oil to the pan and start cooking the chicken on medium-high heat.
  6. When the chicken is colored on all sides, add the chopped onion and minced garlic.
  7. Stir the mix until the chicken is cooked (check the bigger pieces, again we don’t want you to get sick).
  8. Mix 3 parts of oyster sauce with 1 part of water. When the chicken is cooked at this mix to the pan and lower the heat to medium-low.
  9. Make sure everything is covered by the sauce mix. At this point, you can add some red chili flakes to taste to add some heat.
  10. Let it simmer for 3-5 minutes.
  11. Finally serve the chicken with rice. Additionally, you can add some chopped green onions for some fresh green in the dish
